Fascinated Norwegian Cookies.

Since I love cooking, baking & icing thought of exploring some food around the world. Where I live now, Norway… I know what exactly comes to anyone’s mind, it’s NO-WAY!! I’m used to that phrase now. But, it’s not just NO-WAY, it’s been WAY good for me so far.

As I’m cooking with lots of spices around me, comparing Asian cooking and Norwegian cooking, it’s so easy to cook Norwegian food. As every other culture they do have traditional cooking. I got a recipe which is a Norwegians (Scandinavian’s) cookie.

Sandbakkels or Sandkaker”, more than a sugar cookie, I prefer saying it’s a tart. Simple meaning is, sand tarts. It’s a traditional Christmas cookie for Norwegians. This is more like a Danish butter cookie for us.

You will need just a few things to make this cookie.
1 cup of butter
1 cup of sugar
2 eggs
1 tbs of vanilla
1 ¼ tsp of almond essence
2 ¾ cups of flour

This is so simple, make the dough using a mixture. Keep the dough in a refrigerator for 30 minutes, covered with a clean cloth.

You may use small cookie molds to make the cookies. Heat the oven 350` for 12-15 minutes before baked all cookies gradually.

When the tarts are done, can fill with cream and add some fruits (berries) on it. Norwegians they prefer berries. Any berries.
