Garlic Pizza with Chicken Korma ...

It’s been a while; I didn’t come up with any new dishes I was experimenting.  How about some GARLIC PIZZA  with CHICKEN KORMA for dinner? Summer is almost over now, drizzling light rain and cozy weather makes you feel like eating some authentic mouth watering flavors. This could be really good at your dinner table.

The garlic pizza dough is quite different from the previous pizza dough.  Some may call it Naan Bread. But I guess this is  not exactly traditional Naan.

Ingredients for Pizza Dough:

  • 500g flour
  • 1 ½ cups warm water
  • Pinch of salt
  • ¼ tsp dry yeast


Making the Dough:
  • In large bowl, whisk flour, salt and yeast. 
  • Then add warm water and stirring with a wooden spoon until it makes a nice dough. 
  • Cover the bowl with a clean cloth, glass wrapper or glass paper. Leave the dough for 12 hours, until it makes the double has more than the double the amount. 
  • After 12 hours and divide the dough into equal pieces. 
  • Apply some flour on a clear surface and slowly stretch the dough into small uneven circles, roughly 10 inches of a diameter. 
  • Preheat the oven for 45 minutes.
  • Shimmy your stretched dough onto your Steel. Bake until dough is blistered and lightly golden, about 5 minutes.
  • Transfer to a cutting board. Brush with Basil-Garlic mixture. Sprinkle with some salt (If necessary).
  • Cut and serve immediately.

Recipe for the Garlic Sauce is given below. 

    This naked pizza stripes will perfectly match with a good chicken korma. 

    Simple ingredients to grab, 


  • 1.2kg chicken thigh fillets, cut into 3cm pieces
  • 2cm-piece fresh peeled ginger
  • 08 - 09 garlic cloves
  • 2 teaspoons Garam masala
  • 1/4 teaspoon dried chilli flakes
  • 200g (3/4 cup) Natural yoghurt
  • 2 tablespoons tomato paste
  • 6 cardamom pods, lightly crushed
  • Vegetable oil
  • 50g butter, chopped
  • 2 brown onions (thinly sliced)


     Making of Chicken Korma:
  • Process the ginger, garlic, Garam masala, chilli flakes in a food processor until combined. Transfer to a large bowl.
  • Add chicken, yoghurt, tomato paste and cardamom. Stir until combined. Cover and place in the fridge for 2 hours to marinate.
  • Heat oil and butter in a non-stick frying pan over medium-high heat.
  • Cook onion, stirring often, until it turns to golden brown.
  • Add chicken mixture. Cook, stirring often, for 15 minutes or until chicken is cooked through and starts to brown.
  • Stir in cream. Simmer, stirring often, for 5 minutes or until warm.


       Now you may serve the naked pizza stripes with chicken korma.

Pan-fried prawns & tomato puree !!

Thai chili prawns, sweet and sour prawns, battered prawns are standby dishes in any restaurant. Recently I found out my own recipe of this amazing prawn dish which I include the Asian flavors.  Pan fried prawns in tomato puree is a pure, authentic balance of mouth-watering spices. 

Ingredients:
  • 400g fresh prawns
  • 250ml tomato puree
  • Diced 01 big onions
  • One big carrot
  • Hand full of spinach
  • One green capsicum (Cut into Julienne)
  • Half a cinnamon stick
  • 1/2tsp mustard seeds

 For marinating:
  • Chopped in half a garlic bulb
  • 02tsp chopped ginger
  • Chopped 02 green chilies
  • 04tbs soya sauce
  • 03tbs white vinegar
  • Chopped curry leaves
  • Salt, pepper, chili powder (Spice up as you prefer)




Making of Pan-fried prawns & tomato puree.

  • Heat the oil in a deep frying pan and fry mustard seeds, cinnamon & Dried red chili.
  • Then add onion and cook for a few minutes until it starts to turn golden brown.
  • Then add the marinated prawns and fry along with the onions.
  • Then splash the tomato puree cook for a while.
  • Season the gravy with salt and simmer for 5 minutes, stirring, until the sauce gets thickened.
  • Finally, add carrots, spinach & capsicum. 
  • Remove from the heat.





  • Serve straight from the prawn dish with rice.
